For me, it's always a sheet pan dinner! Toss some chicken sausage, bell peppers, onions, and sweet potatoes with olive oil and spices (paprika, garlic powder, onion powder). Roast at 400°F (200°C) for 25-30 minutes. Super easy cleanup and delicious!
I swear by quick stir-fries. Brown some lean ground turkey or chicken, add a bag of frozen stir-fry veggies, and a pre-made low-sodium stir-fry sauce. Serve over instant brown rice or quinoa. Done in 20 minutes!
Lentil soup is my secret weapon. I make a big batch on Sunday, and it's perfect for quick weeknight meals. Just reheat and add some fresh herbs. Packed with fiber and protein!

My current favorite is quick salmon with roasted asparagus. Just season the salmon and asparagus, pop them in the oven for about 15-20 minutes. Healthy and feels gourmet!
