My current obsession is loaded sweet potatoes! Bake a sweet potato, then top with black beans, corn, salsa, avocado, and a dollop of cashew cream. So satisfying and vibrant!

Tofu scramble is my go-to for breakfast or brunch. Crumble firm tofu, sauté with onions, peppers, spinach, and season with turmeric for color and black salt for an eggy flavor. Serve with toast!

Lentil bolognese! It's hearty and feels just like the classic, but with lentils instead of meat. Great over zucchini noodles or whole wheat pasta. Nutritional yeast adds a cheesy flavor.

Tempeh or seitan are great for more "meaty" textures in stir-fries or sandwiches. I also love making big grain bowls with quinoa, roasted veggies, chickpeas, and a flavorful dressing.

These are some seriously creative and delicious ideas! I especially love the sound of the loaded sweet potatoes, HerbalFuel. What about plant-based protein sources beyond legumes and tofu?

Nuts and seeds are excellent! Almonds, walnuts, chia seeds, and hemp seeds add healthy fats and protein. And don't forget nutritional yeast for that cheesy umami!
